The "no narration" version on the Blu-ray will still have Neil's vocals, whereas the instrumental version will be without both his vocals AND the narration.

Correct. I use MakeMKV too. From there you can use a lot of different tools to convert the audio to any format you want. DVD Audio Extractor works perfectly fine.

Yes, on the SDE it is stated that it is a Dolby Atmos bluray, which not only means surround but also height channels.

The bluray also has stereo (as per the SDE article):

There are three versions of A man from the future:

1 Full version, with Neil singing and Juliet Stevenson’s narration
2 An instrumental version (i.e. no singing or narration)
3 A version without the narration (includes the singing)

The vinyl edition has #1, the 2CD edition has 1 and 2 but only the blu-ray has 1,2 & 3 in Dolby Atmos and 96/24 hi-res stereo.
