Off-Strip Las Vegas Restaurants you like

Next week, I'm going to Las Vegas for the 1st time. I'm going to be celebrating my 55th birthday & I'll be staying @ a hotel in the new CityCenter complex. As you might imagine --- I'm jazzed!!!!
I'm not @ all impressed with any of the restaurants that are part of the hotels on the strip.
So, I'd like to get some suggestions from anyone who's been to Vegas about their idea of a good place to eat off the strip.

the city center complex, that looks great i want to go there next time!

anyways I know you want offstrip but first I have to tell you we loved Mesa grill at ceasars when we were there.
the appetizrs were awesome they had these small chicken tacos in this really good tangy smoked peanut chili BBQ sauce and we got these garlic tiger shrimp things.

as far as the dinner they are known for their pork tenderloin which is phenominal and what me and pretty much everyone else gets but I did try my girlfriends grilled lamb and that was really good. its a really clean,ultra modern upscale looking atmosphere.that had something called coffee rubbed filet mingon which I wanted to try but we just had too many appetizers with entrees and various alcohol concoctions.

um,off strip I thought "todds unique dining" was really good ....but expensive...kinda of leaning towards fancy asian themed food but they have everything .goat cheese wontons were great(obviously my girlfriend ordered that I wouldn't order anything called goat cheese left to my own devices).anyways the ribs,skirtsteak were also great. but the place is loud as a freakin metallica concert when its crowded.its in a plaza area.

and we did "hot N juicy crawfish" which was fantastic seafood, shrimp,crab etc etc. we had to be shown like 3 times how the hell you eat crawfish, I dont know, it felt like a lot of work for a few tufts of meat but it was all spiced up an really awesome.

and we went to a breakfast place called "hash house a go go", but the wait was like an hour it was so packed...the breakfast food was ok but the pancakes are the most complicated I've ever seen.thats what people go there for just really inventive different pancake ideas.
we had the brown sugar banana flap jack.so good.but their pancakes are so huge, I'm kinda a big guy and me and my girlfriend shared it and what the waitress took away made me look down and hang my head in shame.if my father was there he would have ripped his shirt and said "I have no son"

I should add, all these are sort of famous touristy kinda haunts.you know, people recogmend them, maybe you'd like to try more obscure places.

i know you said off strip, but the restaurant on top of the stratosphere hotel which revolves is great for a special occasion, great views over las vegas, guy playing the piano and relaxing atmosphere, few years ago since i went there and it is a bit pricey though.

Thanks glenn & singleB. I'm going to see Bette Midler @ Ceasars on Wed so since I'll already be there, I may hit the Mesa grill for dinner 1st. I'm intrigued by the Hash House & it's good to get a review. I may also swing by the Stratrosphere for lunch.
